嵊州小吃Shengzhou Snacks

小笼包、炒年糕、炒榨面是嵊州小吃“三宝”。一百多种小吃,“嵊州小吃”的招牌开遍了全国。

Xiaolongbao, fried rice cakes and fried zhamian noodles are the “three treasures” of Shengzhou snacks — and Shengzhou snack shops are all over China.

在中国很多城市的街头,都能看到挂着“嵊州小吃”招牌的小店:一笼小笼包,一碗馄饨或拌面,便宜又实在。嵊州的小吃有一百多种,城市还被授予“中国小吃文化名城”的称号。其中最有名的三样——小笼包、炒年糕、炒榨面——被称为嵊州小吃的“三宝”。

In towns and cities all over China you’ll find small shops under a sign reading “Shengzhou Snacks” (嵊州小吃): a basket of xiaolongbao, a bowl of wontons or noodles, cheap and filling. Shengzhou has more than a hundred kinds of snacks and has been named a “Chinese City of Snack Culture.” The three best known — xiaolongbao, fried rice cakes and fried zhamian noodles — are called the “three treasures” of Shengzhou snacks.

嵊州小笼包用老面发酵的面皮,顶上留一个“鲤鱼口”,松软多汁。本地人还爱吃豆腐小笼:嫩豆腐加少许肉末,皮薄得像饺子皮。它的来历、做法和“杭州小笼包”的故事,详见嵊州小笼包。

Shengzhou xiaolongbao are raised with an old-dough starter and left open at the top in a “carp mouth,” soft and juicy. Locals also love tofu xiaolongbao: silken tofu with a little minced pork, in a skin as thin as a dumpling wrapper. 炒年糕

Fried rice cakes

嵊州的炒年糕用料丰富:年糕片配上嫩豆腐、腌咸菜和蛋花一起炒,也常加肉丝。咸鲜软糯,是嵊州最家常的味道之一。

Shengzhou’s fried rice cakes come loaded: slices of rice cake stir-fried with silken tofu, pickled greens and ribbons of egg, often with shredded pork too. Savory, soft and chewy, it is one of the most homely tastes of Shengzhou.

榨面是嵊州有名的米面,做好后晾干,可以存放很久,吃的时候用热水泡软。最常见的吃法是炒榨面:配上笋干、肉丝和雪菜,讲究用筷子翻炒,免得面条粘成一团。

Zhamian (榨面) is Shengzhou’s well-known rice noodle. It is dried after it is made, so it keeps for a long time, and softened in hot water before cooking. The classic way to eat it is stir-fried with dried bamboo shoots, shredded pork and pickled greens — tossed with chopsticks rather than a spatula, so the noodles don’t clump.
